Summer drinks

I just realised that I forgot to do my monthly resolution for May! Well folks, I have hit upon a good one; this month will be about investigating summery drinks.

First up… the Mojito! As I already have a real glut of mint in the garden a Mojito seems a good way to kick things off. I mixed lime, sugar syrup, mint leaves, ice, white rum, sparkling water and just tasted it until it seemed correct. There are probably some more exact recipes around but as I know my Mojitos I was ok with winging it. By the way sugar syrup is super easy; gently heat and stir two parts sugar to one part filtered water until it is clear (don’t make toffee!). It takes about 5 minutes on a low low heat. Wait for it to cool down before using. It will keep covered in the refrigerator for several days.
