An alternative to jelly and ice cream

…is vegetarian jelly and frozen yoghurt.

Today after work I was looking in our local whole foods shop for things that I had not tried before and I found some vegetarian strawberry jelly crystals. They are made with raw cane sugar, strawberry, carrageenan, locust bean gum, and beetroot for colour. It worked exactly the same as the gelatin jellies – you mix with hot water and leave to go cold. To go with the jelly I also made frozen yoghurt. I made this with low fat yoghurt to which I added some vanilla and honey to sweeten, and froze in my ice cream maker.

All-in-all a fun experiment. Not something I would eat very often but it is good to have options :) Sometime I would like to try making a vegetarian cardamon and rosewater jelly if such a thing was possible.

    we love ice cream maker here too.
    All we put is coconut cream and mashed banana. vegan homemade icecream! well…it probably does not taste like ice cream but we know what goes in there and so easy!
